Wanting to create a Mardi Gras-influenced macaron, and not growing up in Mobile or New Orleans, we were on the hunt for the traditional flavor of a King Cake. According to my not-vast and skimmingly short research, as well as conversations with friends from New Orleans and Mobile, the original King Cake wasn’t what is offered today. It used to be just a bread-like cake flavored with cinnamon. At some point it turned into a dough that was filled with cream cheese and cinnamon and topped with traditional Mardi Gras colors (green for faith; purple for justice; gold for power). Nowadays it is being reimagined and filled with everything from cinnamon pecan to snickerdoodle, Bavarian cream and banana caramel. (Sounds like they are the macarons of cakes!)
We have decided to stick close to the original by making the cream cheese and cinnamon kind with traditional colors. Laissez les bons temps rouler! Click here (or above or to the right) to order.
