Mardi Gras Macarons

Wanting to create a Mardi Gras-influenced macaron, and not growing up in Mobile or New Orleans, we were on the hunt for the traditional flavor of a King Cake. According to my not-vast and skimmingly short research, as well as conversations with friends from New Orleans and Mobile, the original King Cake wasn’t what is offered today. It used to be just a bread-like cake flavored with cinnamon. At some point it turned into a dough that was filled with cream cheese and cinnamon and topped with traditional Mardi Gras colors (green for faith; purple for justice; gold for power). Nowadays it is being reimagined and filled with everything from cinnamon pecan to snickerdoodle, Bavarian cream and banana caramel. (Sounds like they are the macarons of cakes!)
